Strawberry and Vanilla Bean Custard Tart Recipe

This weekend my son and I baked a thing, a "strawberry pie" or strawberry and vanilla bean custard tart, per his request.  Cooking with a four year old definitely requires a release of control and few deep breaths but every day I am amazed by this little human.  He loves to cook and bake with his momma, can crack eggs like no kid I have seen and can't help but lick every spoon..  I enjoy teaching him all the secrets I have learned along the way, reading "recipe" books at bedtime, and sharing special moments with a flour sifter.  

In all the strawberry tart was DELICIOUS.   The flavors were all spot on and the vanilla bean was the perfect amount (I was skeptical, I mean HALF a vanilla bean, come on).  The one downfall of this recipe was the trickiness in creating a perfect custard and then adding the liquid of the macerated strawberries that instantly watered it down.  I read the other comment on this and decided to swirl my strawberry juice in after setting the custard but it still had the same effect.  After setting in the fridge for a few hours it thickened up and was totally worth the wait!
